We’re back with a crowd favourite from last year. This time as a Pink Bourbon.
Grown at Granja El Paraíso 92, owned and run by Wilton Benitez, this fruity-forward coffee shines with notes of Fuji apple, pink guava, and honey.
Handpicked at peak ripeness, the cherries are sorted by size and density, sterilised with ozonated water and UV light, then put through a 2-stage anaerobic fermentation (52 hours in cherry at 18°C with added yeast, followed by 48 hours in mucilage at 21°C), before a thermal shock wash (40°C then 12°C) and a controlled 36-hour dry (40°C for 12 hours, then 35°C for 24 hours).
